A great pasta dish for any occasion:
Cut melanzane into thin slices, season with salt and drain, blanch (scald) tomatoes, peel, remove seeds, strain, chop onion. Fry onion and garlic clove in olive oil until golden. Add tomatoes, shredded basil leaves, season with salt, stir in crushed pepper and cook gently for 15 min.
Dab the melanzan slices, fry in boiling olive oil until golden brown. Drain on household paper, season with salt, season with pepper in the meantime cooked pasta with the sauce as well as the melanzane.
