Have fun preparing this mushroom dish!

Cut broccoli and cauliflower florets from the stalk. Remove the peel from celery, rutabagas, carrots and cut them into strips. Clean leek and cut into rolls.

Rub oyster mushrooms well with kitchen paper, cut into pieces.

Quarter onion with peel. Prepare a vegetable soup with all the juniper, bay leaf, vegetable cuttings, peppercorns, cloves and a good l of water.

Allow to boil, then strain through a coffee filter.

Fry the prepared vegetables in hot oil, add to the clear soup, cook until al dente and season with nutmeg, salt and pepper.

Beat eggs, mix, add a little curry and sesame seeds and stir well.

Pour all together into a hot, greased frying pan, stir through, stiffen and break into small strands with two forks.

Serving:

Arrange soup in deep dish and spread egg threads evenly over top.
