For the feta cheese candy, wash the thyme and set aside 1 – 2 sprigs. Pluck the leaves from the remaining sprigs and mix them with salt, pepper and nutmeg into the feta cheese.
Wash the lettuce leaves and radishes, cut into slices and arrange on plates. For the sweets, melt the butter.
Carefully spread the dough sheet on the work surface, brush with two-thirds of the butter nd cut into 4 equal squares. Place 2 squares of dough on top of each other.
Spread the feta cheese at the bottom, leaving a margin of about 2 cm on the left and right. Drizzle the cheese with honey. Roll up the squares and press the ends together as if for candy.
Brush them with the remaining butter and bake at 180 °C for about 15 minutes until golden brown.
For the vinaigrette, mix vinegar with mustard, sugar and salt and pepper, then stir in oil. Drizzle the vinaigrette over the salads and place the candies on top and decorate with the thyme sprigs.
