Pour water into an uncoated pan and add the sugar and let it dissolve already slightly.
Add the unpeeled almonds. Season with cinnamon. Leave on the stove for 15 minutes until the sugar is caramelized and wraps around the almonds. Keep stirring so that the sugar does not burn.
Especially once the sugar becomes very viscous, after about 10 minutes, stirring is very important. At this point, it is best to turn down the heat a bit.
Place the finished roasted almonds with cinnamon on a baking tray lined with baking paper to cool.
