Pork Tenderloin Braid with Madagascar Sauce

Rinse pork fillet, pat dry, remove skin and tendons, if any. Cut each fillet lengthwise, starting from the thicker end, but making a short connection on the thin side. At the joint, place both fillets crosswise on top of each other and braid the resulting 4 strands into a braid. Attach the ends with toothpicks. Season meat with salt, bell pepper and paprika and roast in hot butter fat on all sides for half an hour. Cool. Arrange on a platter. Serve with tomato slices and parsley.

For the sauce: 1 cup crème fraîche (150 g) 3 tbsp tomato ketchup, 1 tsp crushed green pepper, chili spice.

Mix all ingredients well and season.
