Breadcrumbs soaked in a bone broth (make crushed bones in water with celery, bay leaf spices, greens, onions about 1 hour) liver, pork belly and breadcrumbs are chopped. Mix with salt and spices and grind through 3mm disk. Add the eggs. The finished quantity is formed into dumplings and left to cook in water for about half an hour (water must not make). Sauerkraut goes well with this.
Tip: Cook only with high quality spices – they are the be-all and end-all in a good dish!
