Peel carrots, wash with lettuce, celery and tomatoes, clean lettuce and celery, finely slice celery, halve or quarter tomatoes, cut carrots lengthwise into strips with a peeler. Drain mozzarella. Peel eggs and cut into six. Arrange salad ingredients decoratively on a large platter. For the dressing, mix all ingredients, season to taste and drizzle over salad. Serve with crispy foccacia if desired.
