For homemade whole wheat pasta with porcini mushrooms knead the spelt flour with oil, nutmeg, egg, salt and water as needed to a smooth dough and let rest covered for 60 min.
Roll out dough into sheets and run through the belt pasta roller of the pasta machine or alternatively cut into fine strips by hand. Allow the spaghetti to dry.
Cook the pasta in salted water until al dente.
Slice the porcini mushrooms and sauté in butter. Add spaghetti and season with salt and pepper.
