Whip the egg whites until stiff, drizzle in the sugar, continue to whip until peaks form, and spread one half evenly on each of the two parfaits. Whip the cream until stiff and spread one half on each of the parfaits. Gently fold in the egg whites and cream and layer the red and white amounts alternately in the glasses.
Cover the glasses with plastic wrap and freeze in the freezer for at least four hours.
Place in the refrigerator for fifteen minutes before serving. In this way, the parfait develops its full flavor and its airy, melt-in-the-mouth consistency.
Tip: For very precise color separation, place the glasses briefly in the freezer after filling each layer. Store the parfait mixture in the refrigerator for this length of time.
