Remove the peel from the potatoes and grate. Add the bread softened in the milk. Finely chop the onion and fold in with the spices.
Heat cast iron roaster. Add oil and continue to heat. Remove the roaster from the stove, add layers of potatoes, bacon and sausage (or dried fruit) and cover with the potato mixture. Spread the margarine flakes evenly over the top.
Bake in a heated oven at 200 degrees (gas mark 3 to 4) for about 2 hours.
Serve with apple compote.
