Deer cutlets best beaten flat between a strong plastic wrap. Season with salt and pepper. Spread with a little farce, place bacon or ham on top and spread again with a little farce. Roll tightly into rolls. Place a dabbed dry net on top and sprinkle with chopped herbs. Wrap rolls well in it. Fry on all sides in a not too hot pan and cook in a preheated oven at 200 °C for approx. 15 minutes. Let rest briefly and cut open diagonally.
