For the cardinal slices, beat egg whites with sugar until stiff. Pipe 6 strips onto a baking tray lined with baking paper. Prepare the sponge cake – beat the yolks, eggs, sugar and vanilla sugar until foamy and stir in the flour by the spoonful.

Pipe the sponge mixture between the snow strips. Bake in the preheated oven at approx. 165 °C for approx. 45 minutes.

For the cream, whip the whipped cream and stir in the coffee yogurt and gelatine. Cut the cake base in half and spread the cream on the lower part, place the remaining part on top and sprinkle with powdered sugar if desired. Refrigerate!
