For the broccoli salad, divide broccoli into florets and cook in salted water until al dente, but never too soft. Rinse ice cold, drain well. Prepare a marinade with salt, pepper, balsamic vinegar, chopped shallot, parsley and olive oil. Place cooked broccoli florets in a bowl and pour the prepared marinade over them. Mix gently. Fry bacon strips with a little vegetable oil, drain on paper towels and spread over broccoli salad.
