Cut rolls into thin slices. Soak raisins in Calvados. Beat eggs with sugar until creamy, add curd cheese and grated lemon peel. Peel apples, cut into quarters, cut into slices without core, mix into curd cheese mixture. Layer with slices of bread in a gratin dish, finishing with a layer of bread.
Mix milk, vanilla sugar, eggs and sugar with a mixer and pour over the bread. Sprinkle the surface with pine nuts, bake in the oven for 40 minutes until golden brown.
