Instructions:

Cut the meat into 2cm wide strips and season with pepper (1), remove the skin from the garlic, pluck the rosemary needles, cut off both and mix with the bell pepper and oil. Add the meat and marinate for 60 minutes.

Separate the onion from the peel and finely dice. Quarter the peppers, remove seeds and septum, rinse and chop into strips. Finely chop the anchovy fillets. Drain the tomatoes, add the juice and chop coarsely.

Put the meat with the marinade in a frying pan and brown it thoroughly. Add the bell pepper, onion, celery, tomatoes and capers and fry. Close the lid and cook for 25 minutes. If necessary, add a little tomato juice.

Thinly grate the zest of the lemon and sprinkle it with the parsley over the cut meat. Season with salt, pepper and juice of one lemon. Serve with boiled, peeled potatoes or fresh white bread and a crisp lettuce salad.

Season with salt only after cooking, as the meat could alternatively become dry and tough.

If you find the anchovy fillets too biting and salty, you can soak them under cold running tap water before chopping. Pat dry and use as directed.

Tip: Always use organic lemons for cooking, if possible!
