When tripe pockets are soft boiled, remove peppercorns, crush onions. Mix yogourt with egg white, stir in and simmer on low heat for another fifteen minutes.

Serve: Place tripe parcels on plates, remove wooden skewer or ae., cut through center and baste with sauce.
