Instructions:

For the whole wheat pasta dough, place the flours in the food processor and mix with a fork. Beat the eggs in a bowl and whisk well (e.g. with a hand blender).

Add the eggs, olive oil and salt to the flour and work with the dough hook to make a smooth dough – you can add a few drops of water if needed.

Remove the dough and knead with your hands for a few more minutes. Wrap in plastic wrap and place in the refrigerator for 1 hour.

A few minutes before further processing put out the dough.
