For the raisin cake, first beat the eggs. Knead the sugar, flour, salt, butter and eggs with a mixer or in a food processor until the dough is light and creamy. This will take about 3 minutes.
Preheat the oven to 180° Celsius.
Wash the raisins, dry them and turn them a little in flour so that they do not sink in the cake. Stir them into the batter. Flavor with a pinch of cinnamon and some zest and juice of a lemon.
Grease a cake pan with butter or oil. Pour the batter into the mold.
Bake the raisin cake on the lowest rack in the oven for 60 minutes, let cool and serve.
