Season the meat in the roaster with salt, pepper and place on the onion rings. Drizzle with olive oil and cover with the roasting lid. Place in the oven at the roast setting of 160 °C. After about 30 minutes, add the rest of the ingredients and cook at 160 °C for another 90 minutes. Season the sauce to taste and thicken with a little cornstarch.
